Due to the kindness and generosity of good people taking me out for birthday celebration meals, I have soup I made in last week’s prep left over.  This prep was to add a little something for the week and add a sweet. All Simply Yum. 😋

As I continue to work through the Blue Zone Kitchen @danbuettner… today, I worked with three ingredients I have never worked with before…Yuca (cassava), Tofu and mini sweet peppers. 

Yuca Cakes…it’s yuca, mini sweet peppers, cilantro (recipe calls for culantro coyote leaf) and a touch of salt.  Quite good.  I would definitely spice it up more next time.  Yuca is high in vitamin C and has anti-inflammatory benefits.  Has a lovely, almost sweet aroma and a good flavor. Mini sweet peppers are high in vitamins A and C as well as potassium and iron.

Chocolate mousse pie…it’s just semi-sweet chocolate chips, silken tofu, vanilla almond milk a Graham cracker crust and some fruit.  This is SO good.  I received mixed reviews on the Avocado Pudding recipe (@amrjones08)….I promise this is fabulous and beyond simple. 

Tofu has antioxidant chemicals, anti-inflammatory properties, and as you know, is high in protein.  I would make a homemade crust next time.

Chocolate…well, the benefits of that is… it makes me happy 😊. Finally,  a new batch of water to add to the flow of the new week. 👍

As we rev up for the more busy than normal time of year…be sure to keep you at the top of your to do list.  Your other to-dos can wait a bit while you keep your own health and wellness a priority. You can’t do the to-dos if you don’t do you!
