Tried something a little different tonight for my week’s prep. Wanted to go light and a bit detox and found a great base recipe for Turmeric-Ginger Chicken Soup. Made a lot of modifications due to time constraints and my desire for more punch. The full recipe is on epicurious.com. My version of it is here.
The base recipe calls for prepping the stock from scratch with a full chicken. I did not. I used low sodium organic chicken stock and pre-grilled lean chicken breast. I added a few more carrots than called for and celery. I left out the chili oil and the bay leaves, while adding a good deal more of the ginger and turmeric. Thank you, Epicurious…it was delicious. My full list of ingredients is chicken broth, water, chicken, onions, garlic, ginger, turmeric, peppercorns, coriander, salt, carrots, celery, Asian noodles and scallions.
Also found a new Smoothie recipe from the same site. It is a Berry-Beet smoothie. I added a more mint and ginger then called for and it is delicious. 😊 It is just almond milk, frozen blackberries or blueberries (I used both), beets, mint leaves, fresh lime juice, chia seeds and honey (I left out the salt the recipe includes). Whoosh in the blender and voilà a super yummy, healthy dessert, snack or meal. I will make it again tomorrow for lunch.
Finally, the water. This time I did ginger, orange, black raspberries and mint. Added the cranberries just for pretty sake.
All set for the week, the Bills won, and snow is on the way…WooHoo. 😊. What else could I ask for?
