Went back to the Blue Zone Kitchen book for this week’s menu. Like the 30-day Alzheimer Solution book – this too is far more than a book with recipes. Having said this before – food can be fun and interesting and medicinal. Changing my relationship with food was my biggest accomplishment in my journey to better health and wellness. While I still let it get the upper hand every now and then, or use it as a reward…even then my choices are better. 🙂

Iced Banapple Turmeric Smoothie: I have used this recipe before and really loved it. It’s light, refreshing and super Simply Yum. It is usually a golden color, but this time I added a few things to the recipe which is just bananas, fresh turmeric and apple. This time I added some kale and spinach, chia seeds, and ginger. So good and a great way to start the day.
Tofu Steak with Miso Mushrooms: I have to say, the flavor in this is really good. Easy prep and lots of good for you stuff in here. Tofu – which I once said I would never use, is becoming something I really like – shitake mushrooms, ginger, miso paste, red pepper flakes and green onion with some cherry tomatoes on top. Simply coat and sear the tofu; sauté the mushrooms in sesame oil, miso past (took a minute to find it the grocery store), and other spices and put together. Filling but light at the same time.
Fresh Fruit Salad: As the seasons change yummy fresh fruit gets better and better. With just a few ingredients you can make a great mid-day snack or even a meal. Watermelon, blueberries, pineapple, red and black raspberries tossed together – super simple and Simply Yum.
Oatmeal Breakfast Cookies: While they are called breakfast cookies, I like these as an opportunity to satisfy my sweet tooth in a healthy way. This recipe could not be simpler – bananas, applesauce, oats and chocolate chips. That’s it. I will say my “batter” was pretty wet, so I refrigerated it for a bit and baked it for about 15 minutes longer than the recipe calls for. So good.
Water: This week added a sliced white peach to my standard lemon and lime water. Added some sprigs for fresh mint as well.
