Sticking with the book this week; The 30-day Alzheimer’s Solution – The Definitive Food and Lifestyle Guide to Preventing Cognitive Decline; and continuing to work with ingredients I haven’t before and learning a lot.  Food can be interesting, fun and educational.  Far better than the nemeses it was for a long time.  We do continue to work on our relationship, however….sometimes it wants to be the boss, but then we get back on track.  This week I am going for a heartier breakfast and a lighter lunch with some roasted veggies for dinner.   This week’s prep does not have a lot of color, but it does have a lot of flavor.

Be sure to try new things.  It is fascinating to learn just how much the food we eat impacts our health, wellbeing and longevity.  Be curious.  Remember, small changes can lead to big gains.

  • Breakfast:       Cheesy Tempeh and Sweet Potato Breakfast Casserole (page 103)
  • Lunch:            Asian Lettuce Boats with Mushrooms (page 140)
  • Dinner:           Roasted Root Vegetables (page 172)
  • Dessert:          Fruit Salad
  • Water:            Of course

Cheesy Tempeh and Sweet Potato Breakfast Casserole:  This was a pretty simple dish to put together with lots of good for you ingredients.  The “cheesy” sauce is made with raw cashews, nutritional yeast, miso paste and garlic.

The casserole is a combination of sweet potatoes, calls for tempeh – I used tofu; broccoli, zucchini, spinach, garlic, onion, veggie broth and leeks – another ingredient I have not used before.  It all came together quickly, with an easy bake and it is delicious.

Asian Lettuce Boats with Mushrooms:  I love mushrooms, so this recipe was right up my ally.  Super simple and really tasty.  This recipe calls for ginger, portobello mushrooms, celery, onions, carrots, English cucumber and spices.  The dressing is a combination of ginger, rice vinegar, sriracha sauce and tahini.

Roasted Root Vegetables:  I used onions, beets, carrots, garlic and I had radishes in the frig, so I added those as well.  Easy marinade and there you go.  A nice complement to a meal or a meal in and of themselves.

Fruit Salad:  Just tossed some seasonal berries and watermelon together for a sweet and healthy treat when I need it.

Water:  Stayed really simple this week…lemon, lime and orange with some ginger and mint added.  So refreshing, delicious and good for me.
