A little late in my food prep this week, but this Shrimp with Roasted Veggies & Pasta was worth the wait. You know the rule…has to be simple and yummy. This was super simple and super yummy…so much so that here’s my attempt at an artist rendition of the finished product. 🍷
Modified a recipe I found, to add fresh flavor and texture. This is bucatini pasta with shrimp and spicy pan sauce. I added a lot of herbs and extra garlic, extra crushed red pepper, and brussels sprouts.
Took just a few minutes and now I have this for lunch/dinner for the week and of course, I made more fruit water (which you have seen too many pictures of). 😊
Takes one stress point away for the week. I know what’s in it, how it was prepared and that it is fresh. Fun to mess around with new flavors and combinations. Have fun with food and build a healthy relationship with it.

Shrimp With Roasted Veggies & Pasta Ingredients: Bucatini pasta, cherry tomatoes, brussels sprouts, garlic, olive oil, basil, Italian seasoning, crushed red pepper and fresh shrimp. When serving, top with a bit more basil and a sprinkle of feta cheese. 👍🎉😁
