I learned last week I really like having my week’s food prep pre packed and ready to go.  Open the fridge and grab the meal. Super simple, with fresh ingredients made by my hands. Good to know what’s in it, how it was prepared and how good it is.

Stayed with the anti-inflammatory plan this week.  Found a couple of interesting recipes and then embellished a bit. Also, used a few ingredients I never have before.

Will you try any of these?  If you do let me know.  Remember…keep yourself on the top of the coming week’s to do list!  A little prep time can be a major stress reliever and allow you to concentrate on other things. Keep it simple, keep it yummy.

  • Breakfast:  Pear Ginger Smoothie
  • Lunch/Dinner: Shrimp and Pesto Bowl with Quinoa
  • Snack: Anti-Inflammatory Spice Cookies
  • Water: Always have water ready

Pear-Ginger Smoothie: Base recipe from https://reciperunner.com and really good.  I added dates, chia, a lot more ginger and I tossed in a chunk of fresh turmeric as well. Multiplied the recipe by 4 and filled individual containers them placing them in the freezer.  Pull one out the night before and allow it to thaw in the fridge.  Good to go in the morning.

Shrimp and Pesto Bowl with Quinoa:  Found a yummy recipe from https://eatingwell.com and embellished a bit.  Healthy, and simply yum. I added, to the already yummy recipe, garlic and fresh basil to the shrimp sauté and more fresh lemon to the pesto dressing.

Anti-inflammatory Spice Cookies: Found a recipe from https://allthenourishingthings.com and was excited to try it. Used cassava flour and coconut sugar…two ingredients I have not before used.  Not going to lie…my dough was a fail.  Instead of rolling the cookies as called for, my dough was too wet so I dropped the cookies.  As you see they have a bit of a cake texture but still taste great. Topped a few with a drizzle or more of melted dark chocolate.  Will try again at some point to make them correctly.  Love the flavor.

Water:  Cucumber, cranberries, ginger, lemon and fresh mint. PLEASE continue to hydrate each day.  Winter is not a reason to drink less water.  I start my day, before I even brew my coffee with a big glass of this water. Sets me on the right path before breakfast.
