So, how best to stay on track this week with so much dominating our thoughts?ย  I am an emotional eater and had to do something to keep me focused. ๐Ÿ”ญ ๐Ÿ‘€๐Ÿ”

I wanted to do all good for me veggies, but what? Roasted veggies of course, it had to be easy and yummy. ๐Ÿ˜‹

Loving the ability to quickly roast veggies and enhance their great natural flavors.ย  I have brussels sprouts, cauliflower, mushrooms, red & orange peppers, zucchini, and tomatoes.ย  I bathed them all lightly in olive oil, fresh basil, chopped garlic with a bit of salt and fresh cracked pepper.

Roasted them just enough so they were not raw and not fully cooked. I have to say….soooooo good.ย  Much better than I anticipated. Now I have lunch for the week and feel good about doing something good for my body. ๐Ÿ‘๐ŸŽ‰๐Ÿ€

Of course, water…gotta do the water. ๐Ÿ’ฆ Cucumber, lemon, lime, orange and chopped fresh ginger.
