Not sure what it is about these last couple of weeks, but work and life have been so busy…hate the word “busy,” maybe better to say work and life have been full.  Some more travel and lovely friend time too….but it has made me remember, time does indeed go very fast.  I want to do all I can to live each moment and each day well.  Be it food prep, rebound classes (you all need to give that a try), visits, travel, or rest.  My goal is to do whatever I do well.

My prep for this coming week has me back to the books with a few modifications.  I love using what I have learned from my reading and review and using the base of some wonderful recipes and modifying in a way I can feel good about.  By the way, don’t you love how beautiful and bright the greens get when they are sautéed?  Experiment, try different things and see where it takes you.  Sometimes I surprise myself other times it is a NAH, didn’t work.  Learning what doesn’t work is learning all the same.

This week’s Menu:

  • Breakfast:                    Energy Smoothie – Blue Zones Kitchen (page 246)
  • Lunch/Dinner:              Farro Tempeh Bowl – The 30-Day Alzheimer’s Solution (page144)
  • Snack:                         Mostly Berry Fruit Salad
  • Water:                         Of course

Energy Smoothie:   I took the base of the recipe in the Blue Zones Kitchen https://www.bluezones.com and modified it a bit.  I started with almond milk, ginger and turmeric and added kale and spinach then blended.  Added chia seed, and a bit of collagen powder and the banana, along with the plant based non-dairy yogurt.  Blended that and then added the frozen peached and blended it all on high speed.  It has a very fresh flavor I will enjoy having for breakfast each morning.

Quinoa Tofu Bowl [Farro Tempeh Bowl]:  I was not able to find Farro or Tempeh in my grocery store today, so I went with Quinoa and Tofu…still really good.  This has so many good for me things in it and a fantastic flavor.  The recipe https://teamsherzai.com/30-day-alzheimers-solution/ was easy to follow and pretty straight forward.  Sweet potato, broccoli, kale, garlic, cherry tomatoes and tofu made for a beautiful and filling dish.  I love using quinoa because it is good for me, filling, tasty, super easy and fast. I have found it holds up well too.

Mostly Berry Fruit Salad:  This time of year, I grab as much fruit as I can and use as much darker, sweeter elements when I can.  This is just black berries, blue berries, red raspberries and I added some pineapple due to some of its anti-inflammatory properties and I bought a big watermelon so tossed some of that in there as well.  Satisfies my sweet tooth and is very refreshing on super-hot days like we have been having.

Water:  Keeping with the peach theme from the smoothie, I made this water super simple.  Lemon and lime (my standards) and sliced peaches.  I do add some sparkling water as well.
