It’s all about the greens this week. I am working my way through the Blue Zones Kitchen by Dan Buettner while sticking to my Simply Yum principles. 🌷
First up…we stop in Sardinia, Italy with Quick Greens and Onion. I was craving greens and this was simple and very tasty. I did amend the recipe a bit by using two types of onions, added garlic and fresh basil as well. My greens were kale, spinach and collard greens. 🧄🧅🌿
Wanted crunchy greens too so added a simple salad of kale, romaine lettuce, yellow and red pepper, green beans and cucumber. 🥒🥗🥬
Added a lovely sour dough bread, light dressing and of course water (lemon, lime, peach and mint leaves). 🍶
Holiday or not…prepping for the week’s meals takes one thing off my plate and allows me to stay healthy, eat well and concentrate on other things. 🌷
Tomorrow morning I will be in Okinawa, Japan for breakfast with an Iced Banapple Turmeric Smoothie. 😄
Small win today…errands took me near a DQ and I encouraged myself not to go in…went home and had yummy watermelon instead. 🍉
