It’s been so cold I wanted a taste of summer so went Super Simple and Simply Yum.  Went with some basics, more raw and a tasty dessert with another ingredient I had not before used – buckwheat flower.

Thank you for letting me know when you try the Simply Yum recipes.  It is fun to hear how they turned out and if you and your family enjoyed them.  Keep letting me know and remember, if you want to share a Simply Yum of your own….I’d love to give it a try.

This week’s menu:

  • Breakfast:                   Anti-inflammatory Smoothie
  • Lunch/Dinner:             Pasta Salad
  • Dessert:                      Buckwheat Zucchini Chocolate Cupcakes
  • Water:                        Simply Citrus

Anti-Inflammatory Smoothie:  Went back to basics here.  Spinach and Kale for my greens; a chunk of fresh ginger and another of fresh turmeric, a small fresh beet, a cup and a half of almond milk, just a dollop of almond butter, a bit of water. Blended that all in my blender and then added frozen pineapple and other frozen berries – blueberries, black raspberries and strawberries.  I added a bit of Greek yogurt at the end and it smoothed it out nicely.

Pasta Salad:  Kept it mostly raw but tasty.  Bow tie pasta tossed with some of my faves…sundried tomatoes, artichoke hearts, red and green peppers, a few slices of avocado and topped with a bit of fat free feta cheese.  I added steamed shrimp as a protein.  For the dressing I simply chopped up garlic and added it to olive oil, lemon juice and a sprinkle of a garlic and herb spice mix.  I also added a bit of the liquid from the sundried tomatoes and from the artichokes.  Very tasty.

Buckwheat Zucchini Chocolate Cupcakes:  Found this unbelievably simple recipe at www.unconventionalbaker.com and decided to give it a try.  Ingredients all go into the blender and poof….cupcake batter with all pretty good for you stuff – zucchini, dates, coconut cream, and maple syrup.   The frosting is just as simple with much of the same ingredients.  The full recipe is located here: https://www.unconventionalbaker.com/?s=buckwheat+zucchini+chocolate+cupcakes

Water:  Simply citrus this time with orange, grapefruit, lemon and lime.  So good and makes me feel so much better when I keep up with my water intake.  Give it a try, tastes great and look pretty in the frig too.
