Back from paradise and getting ready for a deep dive into reality.  After an absolutely sublime week away I need to step back and go simply yum.  🌴🌊🏖

Straight up veggies this week two ways.  Roasted and raw…two different salads with the marinade for one doubling as the dressing for the other.  Roasted salad includes green, red & you peppers, cauliflower, Brussel sprouts, tomatoes, shitake mushrooms, zucchini, and onion.  Sprinkled turmeric and paprika on top.

Raw salad includes tomatoes, cucumber, olives, cauliflower, red and green pepper, scallions, fresh basil and zucchini.  

Dressing/marinade is olive oil, fresh lemon juice, a bit of rice wine vinegar, garlic, fresh basil, and a spice blend. 

Water is all citrus this week…lemon, lime, orange and grapefruit with a few basil leaves.

Being able to be away and recharge at a beautiful place with those rare people in your life who know you and love you anyway 😄 is fabulous, (pic at end of post) but being in “reality” is pretty fabulous too.  🎉

All of it is part of taking care of yourself …body, mind and soul.  Whether it’s time away or appreciating right where we are…finding the blessings in it can make all the difference.
