I already know this coming week will be busy and there are things to finish tonight; so reducing the list of to do’s and being prepped is necessary for me.  I prepped earlier tonight with another super simple, simple yum meal for the week.

Mexican inspired shrimp and rice.  Found a foundation recipe online and modified a bit.  Sauté the shrimp and set aside.  To the pan, add garlic, onions, cayenne pepper, and chili powder.  Add peppers (I did red & yellow), salt and pepper.  In goes the rice, beans (I used black and red), oregano, diced tomatoes and a bit of water.  Let it simmer and adjust the spices as you choose.  30-40 minutes later, add back the shrimp and cilantro…serve with a squeeze of lime over top and voila…simply yum.

Made new water of course and did a batch of my self-proclaimed immunity concoction.  Done!  As silly as it sounds…I feel a bit accomplished and ready to dive into my awaiting projects.
