Tonight’s prep was delicious and fun. I used a few ingredients I have never used before including tahini paste, rainbow carrots, and fresh lentils. 🥕👩🍳
Found a recipe on A Beautiful Plate, then adjusted the spices and added more veggies. This does pass the super simple-super yum test, although cooking time is a bit long due to the prep for the lentils.
It is tasty, filling and along with my fruit water, I’m set for the week. 👏👏👏👏
This dish contains lentils cooked with onion, garlic and bay leaves. With that– is more garlic, roasted with brussel sprouts, rainbow carrots, red pepper and zucchini. Tossed it all together with red onion and a bit of olive oil.
The dressing was super-duper simple…tahini paste, fresh lemon juice, salt & pepper. 😁
Now this is off my list and I get to enjoy a glass of pinot noir and set myself for what will be a nutty work week. 🍷
