This book is filled so much important information. It is not a diet book or just a recipe book, or a quick fix to prevent Alzheimer’s. It is so much more from which I have learned a great deal about the impact of what I put in my body, how I treat my body and how I live my life impacts my brain. I encourage you to pick up a copy. This week I used another ingredient I have not yet used and learned about the sometimes small but impactful differences various ingredients have. That ingredient this week is Spelt flour.
Hope you will have some fun with food…. see it for the positive impact it has and expand your knowledge of all of the wonderful possibilities out there. I don’t always get it right, but I have fun trying.

Blueberry Forward Smoothie: I wanted to stick with lots of blueberries this week and added more veggies. As always, I started with my base…. kale and spinach, then added carrots and broccoli florets. To that I added psyllium husks, chia seeds, fresh ginger, turmeric powder and collagen protein powder. With that goes unsweetened almond milk, some frozen banana slices and fresh blueberries. Once blended, I added some frozen wild blueberries and let is mix for a while. Poured it into my mason jars and topped with a blackberry.
Greek Gigantes: This recipe fits beautifully into my Simply Yum requirements. It is almost chili like but not. I made one modification to this by adding near the end of cooking some low sodium V8 juice – I thought it was a bit thicker in consistency than I wanted. This has a lot of so good for me ingredients including garlic, onion, diced tomatoes, turmeric, pepper, butter beans, spinach (I used a combo of spinach and kale), serrano peppers ad parsley.
I used a long cook combo rice to serve with this yummy mix. It is light yet filling, tasty and not heavy. It’s gonna’ be a good week.
Spelt Blueberry Scones: Another super simply Simply Yum recipe. I have never made scones or used Spelt flour before now. A few ingredients mixed up in one bowl and baked…. poof. So good. This scone has of course blueberries, spelt flour, lemon juice and lemon zest, applesauce, and olive oil. Give this one a try. I admit I did not shape them as well as I should, but I will definitely try this one again and perfect my technique.
Water: This week used lemon, lime, orange, fresh ginger and apple slices.
