One of my stranger concoctions. I am happy to report while this isn’t my prettiest plate, the flavor of this eggplant and tomatoes dish is pretty good. 😋 After a very busy weekend, you can see I am late on prep for the week and I thought about letting it go, which would have lead to bad eating for me, so better late than never. 🎉
A friend gave me a beautiful eggplant and when I started, wasn’t really sure where I was going to end up. I sliced, then baked the eggplant with a little bit of olive oil, garlic and Italian seasoning. I saved some to make a few crispy eggplant bits as well.
Made some shell pasta, added a bit of olive oil, sweet cherry tomatoes, garlic, fresh basil and a touch of fresh Romano and Parmigiano. After letting it meld, added the baked eggplant and let it meld a bit more. Served with the crispy bits on top.
Had to do a fresh fruit salad as we slowly move toward fall and of course, my water…lemon, lime, orange, pineapple, ginger and mint. So good! 🎉
Even less than perfect looking can be yummy and take me through the week. 😄 Feels good for me, even late, to stay on track. Yea.
