A tad late on my simply yum but oh my…really yum! After two weeks of birthday celebration (happily, not over yet…I think I’ll take it to the end of the month😄), I wanted to prep something really good for me, warm and cozy. I found a recipe on damndelicious.net called Detox Chicken Soup. I was sold. Of course, I tweaked a bit for me but so good…I wish you could smell how good my house smells right now!
So much “good for you” in this: kale, mushrooms, celery, carrots, garlic, cannellini beans. onion, lemon and parsley. I used chicken stock with almost no sodium and lean, boneless and skinned chicken thighs.
Of course, there has to be water…I use sparking water along with flat; lemon, lime, grapefruit, fresh cranberries and fresh mint.
Feels good to be set for the week knowing I am doing good for my body and my psyche. 😊
This will be a busy and/or stressful week for some…check in on those you care about, those you haven’t in a while and maybe even someone you should but need some courage to take the step. Doing so will be good for you and them. 🤗
Remember too…take time for you…a walk, a bath, a read or a nap. You deserve to be on the top of your to do list….you do! 💕
