With another busy “on the move” week ahead I wanted to prep yummy, healthy and mobile.  Sticking with the recipes in the Sherzai’s book again this week, got to try a few recipes that I will say blended nicely with the Simply Yum requirements.

I must admit, these recipes have been impactful.  I can feel the difference in my body mechanics so to speak.  The ease of the day to have these meals in the frig and ready to go – and go with me, have been a real stress reliever.   There has been no added sugar in my diet since I started using these recipes…. unusual for me. So far so good and I appreciate the go to of this book not only for the recipes but for the “why” behind them all.

  • Breakfast:       Crustless Mini Quiches (page 100)
  • Lunch:            Berry Yummy Smoothie (kams creation)
  • Dinner:           Falafel Wraps with Tahini Dressing (page 118)
  • Water:            Yes indeed

Crustless Mini Quiches:  These are packed with yummy veggies and tasty herbs.  They are made up of scallions, garlic, red pepper, kale, asparagus, almond milk, tofu, tahini, turmeric, salt and pepper.  Simple preparation, yummy dressing and simply yum outcome.  Grab and go!

Berry Yummy Smoothie:  I wanted to have something that would satisfy my desire for something sweet and remain good for me.  I prepared this to have a mid-day treat that is also a good lunch.  This has almond milk, kale, spinach carrots, fresh ginger and turmeric, chia seeds, a bit of cashew better and lots of berries – frozen and fresh blueberries, black raspberries, frozen cranberries, and red raspberries.

Falafel Wraps wit Tahini Dressing:  This looked so good in the book I had to try it.  So easy to do and I will say turned out great.  Made with chickpeas, walnuts, garlic, onions, cilantro, mint and parsley, with cumin, and coriander.  The dressing is tahini, lemon and za’atar seasoning.  I didn’t have za’atar and did not find it so used an Italian herb mix that worked very well.  Then, before the “wrap” added cucumber, tomatoes and red onion.

Water:  You know by now, water is a weekly essential.  I do sometimes bring a thermos of it with me when I travel – but opening that frig and seeing that pretty pitcher of good for me blessing of water….so good.  Start every morning with a big glass full – even before the coffee.  Then drink it pretty much all day — refill and go again.
