Took Simply Yum to the epitome of simple today. Had a bit more sugar this week than normal, so wanted to go green. Saw a clip on Food Network making a crunchy olive salad. I added a few things. 😊
Base is Romaine, great crunchy texture and lots of vitamin C, K, and beta carotene. Added celery for added crunch, also high in vitamins A, K, and C, along with potassium. I wanted more, so I added cabbage as well.
I added three types of olives just cut in half; and roasted red peppers (so good). I am still trying to add beans to my diet, so incorporated some garbanzo beans. Finally, I had part of a red onion leftover, so tossed that in as well.
Dressing is olive oil, garlic, chopped fresh basil, juice of a whole lemon, and a dash of salt and pepper.
I also made a caprese salad to go with the crunchy olive salad. Nothing to it, sliced low fat mozzarella cheese, yummy Italian tomatoes, fresh basil and a drizzle of olive oil.
Last but not least…water. Ginger, cranberries, lemon, lime, and pink grapefruit along with fresh mint leaves.
Feels good to go fresh for the week. This prep took so little time and is very tasty.
Much like kindness…taking care of your health and well-being does not require grand action. Sometimes the smallest steps yield the greatest gains. 🤗
