After an amazing weekend away not gonna lie…got home this afternoon and the last thing I wanted to do was go shopping and prepping.  Had lots of good reasons to let it wait but…..i got off my butt and got it done…so glad I did.

Went to an old standby….i needed not only simple but tasty and quality ingredients…this is super simple, not to mention good for me. 

This is more than a soup but less than a stew or chili consistency.  It is light yet filling.  Eat it on its own or with a salad or rice.  Yum.

Onions, garlic, peppers and beans. NOTE:  the more I read the Blue Zone Kitchen…the one thing all the regions have in common is beans…all different kinds of beans eaten every day.  So I added three kinds here…red, black and cannellini; crushed tomatoes, mushrooms, low sodium V-8, red pepper flakes and cayenne powder topped with cilantro. 

No fancy serving…just pour into containers and you are done. Had to make more water of course…lemon, lime, orange, cucumber and ginger. 

There you have it…ready and healthy for the rest of the week.  Whew….rest well friends.  Taking an hour or so to keep on track is worth it for me…you are worth it too! 🌷🤗
