Sunday evening-week’s prep…done.Β  Simply yum complete.Β  Honestly had no real plan tonight.Β  As I continue my read of Blue Zone Kitchen, I am learning about the healthy, good for you, ingredients within it. πŸŽ‰

I decided to get several of those ingredients and make it up as I went along.Β  Happy to report…quite tasty. πŸ˜‹

I started layering the ingredients so they could get to know each other and share their flavors.Β  Starting with the onions and garlic, the peppers (one red & one green), Shiitake mushrooms, then cannellini white beans and black beans, sprinkles of red pepper flakes during cooking, fresh basil and shrimp.Β  Then added sweet cherry tomatoes and more fresh basil.Β  Then I transferred it all to a pan lined in brown rice and baked it for about 15 minutes.Β  There you have it.Β  Beans Shrimp and Veggies πŸŽ‰πŸ˜‹πŸŒ·

Also tried a recipe from the book for oatmeal breakfast balls.Β  Just bananas, oats, applesauce and chocolate chips (i used dark chocolate chips). The consistency was not dough like…it was pretty wet so I did not accomplish the “balls” but nonetheless it has good flavor, but the texture is a bit odd for me. πŸ€”

Of course, did a fresh batch of water (lemon, lime, orange, fresh ginger and mint leaves).

Finally, did my immunity concoction…garlic, ginger, turmeric, black pepper, touch of olive oil, fresh lemon and fresh orange juice.

There you have it…set for the week.

Sounds like a lot but as with all of my prep it is super simple.Β  My wellness is worth a little bit of time to take food of my list of things to consider during a busy…easier to do take out week. I am lazy at heart, so this Sunday prep keeps me on track. Woo Hoo! πŸŽ‰πŸ˜‹πŸŒ·πŸ˜
